I'd be so interested to see how the syrup is collected.
The sap is running early this year.
I parked under a maple tree yesterday and got drips of sap on the car! Spring!!

I have never been a real fan of maple flavoring..but I have never had maple syrup "fresh"...maybe it would be different!
Oh I just read Linda's comment above and it drove whatever I was going to say right out of my mind. Linda -- there is absolutely NO comparison == real maple syrup is soooo scrumptiously better than the fake stuff.
Suddenly I am hungry for pancakes and the REAL stuff ;>)

Nothing better than a hot pancake smothered in good maple syrup.
I use maple syrup as a replacement for my caramelized sugar on my flan (when I make miniature ones). It works.
I wonder how good this year's early crop will be. Did you try any?
Real Maple Syrup is not something we down here are used to. In the shops it is very VERY expensive. But I do like this out and proud sign.

Yes it is that time of year; down here, too. We went to a maple syrup fair two weekends ago. I almost posted my maple syrup sign this week but it's not nearly as colorful as yours. ;-)
